1/2 pounds Ground turkey
1 teaspoon Minced onion
1/2 cup Cilantro (chopped)
1/2 package Taco seasoning
15 ounces Black beans
1/4 cup Water
1 cup Colby jack cheese
Garnish:
as desired Salsa
as desired Sour cream
as desired Shredded lettuce
Directions:
Brown turkey with minced onion in 10-inch skillet. Mix in taco seasoning. Add cilantro, beans and water. Simmer 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Cut into 8 pieces and serve with your choice of salsa, sour cream and/or shredded lettuce.
