May Is Egg Month

May is EGG MONTH!  Eggs are an incredible combination of great taste and sound nutrition.  Dietary Guidelines for Americans state that that there is no longer a limit on dietary cholesterol.  In fact, they’ve included eggs in all 3 of the recommended eating patterns…the healthy U.S.-style, the healthy Mediterranean Style and the Healthy Vegetarian Style. 

Here's a great new egg recipe you might want to try.

Serving Size: 8

Nutritional Information: 230 calories, 14 g fat, 5 g saturated fat, 265 mg cholesterol, 390 mg sodium, 8 g carbohydrates, 2 g fiber, 18 g protein



1/2 pounds Ground turkey

1 teaspoon Minced onion

1/2 cup Cilantro (chopped)

1/2 package Taco seasoning

15 ounces Black beans

1/4 cup Water

1 cup Colby jack cheese


as desired Salsa

as desired Sour cream

as desired Shredded lettuce


Brown turkey with minced onion in 10-inch skillet. Mix in taco seasoning. Add cilantro, beans and water. Simmer 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Cut into 8 pieces and serve with your choice of salsa, sour cream and/or shredded lettuce.
